pancakes are one thing i am very good at. golden brown on both sides.
although, i flip with a spatula, and the implication i am getting from lex seems to be that he like...flicks his wrist while holding the pan or soemthing.
The key is to have the pan fairly hot and flip JUST as bubbles appear in the batter.

yeah, i use an electric griddle for pancakes and flip them with a spatula. omelets require the high-flying wrist action imho.

I've no problem flipping omelets; they're easier to control because I like them a bit cooked on the bottom.

tbh one of the reasons i bought a rice cooker is to make brown rice & quinoa etc, so I can maybe make 'light cooking' easier on myself? in the kitchen i tend to default to rich / hearty / comfort foods that are not so good for you.

jason used to love to cook for me because i would get very excited and devour everything. i could never return the favor though. the best i could do was pay for the groceries.
i mean, i can make some mean french toast! and i used to be able to do a good job approximating my mom's mac 'n cheese, but i can't bring myself to eat that much dairy all at once anymore.
i would TOTALLY watch a show on A&E that just profiles people who try and boil rice but in the process break down and cry and nearly go insane

i've no idea how one even begins to bake chicken or indeed do anything with raw meat.
yep. plus raw meat makes me want to hurl. :) and marinating? i'd inevitably find a way to fuck that up real good. maybe i could learn! i'm as anxious about cooking as i am driving. i stress out if i don't know exactly what i'm doing, and my inclination is to panic as soon as i do something wrong. but once i've done it like 5, 6, 7 times, then i'm set.

yeah. driving is the grown-up thing i still don't do.
parents split and cars became inaccessible partway through getting my full license (we have graduated licensing) and now I live somewhere where I never really need to. I know that I should but at this point it just prompts so much anxiety and i'm all about public transit and walking places.
I mean, future road trips with boy etc. want to be possible, but it's tricky. Boat may have sailed there.

I don't understand how I ever afforded. I owned cars for 11 years - since I was 17 years old - until I moved to Chicago and I always paid for my own gas, insurance, and maintenance. And tickets. So many tickets. And lawyers.
Now it seems impossibly expensive even though I'm making far more money than I was in my late teens.
Just counted: I've owned 8 cars.

Me too, and some people think I'm challopsing when I say that.
Even when I'm not driving, a ride in a vehicle is nice. Sometimes my commute ends too quickly. Yesterday I was engrossed in a book so I stayed on to the end of the line and then rode back.

when you're late and driving it's more aggravating cuz you feel like you have some control over the situation, but today i was running legit 30 mins late to work but i wasn't that stressed cuz once i got on the train there was really nothing i could do about it
