most of the mex places here do, except for the more high-end restaurants that specialize in seafood.

Oh yes. The AZ/TX divide. It's probably all in how the Mexican immigrants from the two states came from different parts of Mexico. Which is why CA Mexican food tasted very weird to me when I first had it (which is putting it lightly), and why I suspect NM Mexican food would taste more familiar to me.

Most of these local places, BTW, have a special section in their menus for nachos, though they're not the type with the fakey orange melted cheese-type topping (which I do like, actually). Most of these variations of nachos also include beans, BTW. I don't know why; that's just how things are, apparently. Hm.

There were some good burritos to be had in Redding — grilled chicken and roasted green chili at Senor Rosas, and spicy shrimp at La Cabana. Nothing here that I don't make myself.

Usually 2 per week, very different from one another. I had a chicken burrito from someplace near my work yesterday and a really good one at La Cabanita last Saturday night. I may go for another one Friday night or Saturday or Sunday...down in San Diego. Sure would like to find a nice mole burrito someplace near 90026.

Usually lobster burritos at El Zarape.
