Admission time: I once lived in a CO-OP in Berkeley called, get this, CASA ZIMBABWE - the decor was very gorillas-with-credit-cards. Anyway, the person whose duty it was to cook wasn't around by 7, so I saved dinner by doing a gigantic burrito bar by myself for like 70 people. I had like 25 pounds of beef cooking and I shaped it into the USA and invited people into the kitchen.

General comments:

I've had carne guisada tacos before with rice in them, so rice is totally ok inside tortillas.

(Though they did look askance at me when I ordered them that way. Eh. They's tasty.)

I don't know very many Mexican/Tex-Mex places here that have burritos on the menu, but the most authentic-tasting "Mexican" national chain restaurant actually makes its trade on burritos. That would be Chipotle Grill. Chipotle has THE MOST AUTHENTIC-tasting food I've ever had from a chain that can be found outside a specific region of the country, even though their tortilla was a bit chewy. Regular flour tortillas purchased at a molino are light, pillowy, and soft. And bad for you too, sure, but oh they taste so good.

Last Mexican food I had: Two potato & egg tacos on corn tortillas for breakfast Sunday. I think. Yeah. The corn tortillas were mercifully homemade, so they were deliciously thick and hearty. Not like the stuff you get from a package at your local McMart, though those are good for home use & for making migas or chilaquiles.

Oh! And correction time -- enchiladas aren't supposed to have meat in them unless they specifically mention they've got meat. Enchiladas are supposed to be filled with cheese. That's it. And the best enchiladas have just a rich chili powder-based sauce on top, not actual chili. Though if that's what the restaurant wants to do... eh.

Oh yes. The AZ/TX divide. It's probably all in how the Mexican immigrants from the two states came from different parts of Mexico. Which is why CA Mexican food tasted very weird to me when I first had it (which is putting it lightly), and why I suspect NM Mexican food would taste more familiar to me.

Most of these local places, BTW, have a special section in their menus for nachos, though they're not the type with the fakey orange melted cheese-type topping (which I do like, actually). Most of these variations of nachos also include beans, BTW. I don't know why; that's just how things are, apparently. Hm.
