I'm voting for Alabama because Dreamland ribs blew my fuckin' mind and I've eaten there more recently than KC, Memphis or the CAROLINAZ (never been to Texas much.) St. Louis is not a great BBQ town IMO.

i have read the mongolian bbq wiki and i am declaring it to be not bbq

Nomadic Mongolians have several barbecue methods, one of them called 'Khorkhog'. They first heat palm-sized stones to a high temperature over the fire and sandwich several layers of lamb and stone in a pot. The cooking time depends on the amount of lamb used. It is believed that it's good for your health if you hold the stone used for cooking.

Another way of cooking is a "boodog" ("boo" means wrap in Mongolian). Usually marmot (black tail prairie dog) or goats are cooked in this way. There is no pot needed for cooking "boodog", after slaughter and dressing, the innards are put back inside through a small hole and the whole carcass is cooked over the fire.

The Mongolian barbecue often found in restaurants is a style of cooking falsely attributed to the mobile lifestyle of nomadic Mongolians. Having its origins in Taiwan in the mid to late 20th century, "Mongolian" barbecue consists of thinly sliced lamb, beef, chicken, pork, or other meat, seasonings, vegetables, and noodles, or a combination thereof, that are quickly cooked over a flat circular metal surface that has been heated.

When I was living in the Delta, I did a review for an organizational newsletter of about 20 or so Q spots, from The Cozy Corner to Rob's Ribs just outside of Leland, to Armstrong's in West Helena, etc. Never has gaining 15-20 pounds been so damn enjoyable.

I know this will sound like blasphemy, but Western New York has this amazing bbq sensation known as Chiavetta's. It's this fantastic vinegary marinade that is delicious. It's totally a regional thing, but can be found at every 4th of July picnic and every church's chicken dinner (my grandparents always made sure to get a half chicken).

Oh hi! I was just coming here to sing the praises of EASTERN NC BBQ.

When I visited Charlotte last year I was very sad to discover that they are not so big on Eastern style, but instead use that sweet thick sauce (I'm looking at you, TX and W. NC) or a spicy sort of vinegary sauce.

One thing I am a little unclear on--"Lexington" and "Eastern" are synonymous, right? (despite Lexington being in the center of the state).

nah, I think you've got it exactly backwords:

A word here about the sauce. There are two different styles of North Carolina Barbecue, Eastern and Western. In both cases the sauce is a vinegar-based concoction, heavily seasoned; the largest difference is that the Western, or Lexington style of barbecue adds a small amount of tomato-base to the sauce, and also roasts pork shoulders in preference to the whole hog. That's it. That's the difference. Yet these tiny differences have caused near blood feuds between proponents of the two different styles. In both cases the vinegar base is augmented by a variety of secret herbs and spices – some favorites are salt, pepper, red pepper, cayenne pepper, onion powder, garlic, nutmeg, molasses, whiskey, and brown sugar. The specific potion is often a closely held secret, or varies depending on the ingredients at hand, but the sauce is thin, unlike most commercial tomato-based barbecue sauces. No roaster in their right mind would put that sweet, ketchupy stuff on a perfectly good pig.

I can't believe that the best BBQ in the world got the same number of votes as Korea!

That's gotta be because there's not enough mid-Americans here to represent KC, but I'm serious: this isn't even a contest. You like pork? KC does it, and it's fantastic (yes, even pulled). This is pork so smooth it makes foie gras seem like wood. You like brisket? KC does it, both the tender-as-butter inner stuff, and burnt ends, the zenith of 'cue. You like ribs? KC does it. Heck, at arguably the top place in KC, LC's, you can even get shrimp...and this is a place with bars on the window, a deer's head on the wall, and the only visual art on the wall...a signed Aerosmith pic. Well, that's Carolina, Texas, and Memphis all met.

And this isn't even to get into the matter of sauce (so we can meet the Texans on their own terms).

All has become clear. I think I'm confused because I lived in Greensboro which is very close to Lexington, but the Gboro BBQ scene was dominated by the Eastern style.

Best thing about NC is the BBQ. That's where I learned the term "pig-pickin'."

Gates is fantastic. If I were bringing a new visitor to KC to just one place, it would be Arthur Bryant's, though, for the atmosphere, and the legend, I guess. After that I'd go to LCs if I were near the city center (pork or burnt ends are great, and the best fries on Earth), or Oklahoma Joe's in KC KS (esp. for the Z-Man, a brisket sandwich with smoked mozzerella and onion rings). I have a soft spot (ok, after living near KC a while several soft spots) for Jones' in KC KS, and tend to go there now when I'm in town, but I wouldn't go there as a first-time visitor to the city, prob., just b/c there's so many other places to go first.

Big fan of BAR B-Q in vaguely Park Slope/Sunset Park. 21st St & 6th Ave. Cheap. Monday nights FREE BOURBON OF THE WEEK 7-9. Some of the best wings evar. Huge & meaty, smoked and then smothered in Frank's-based sauce. Deeeeeefuckinglicious. Cheap also!

i like zeke's in west hollywood even though it's completely bourgie. wasn't wowed by baby blues bbq the one time i went, but they did have this very good housemade pepper-infused vinegar that mixed well with the bottle of hot sauce that was sitting next to it. i would go back just to guzzle that.
