Interesting... we are hiring a wood fired pizza oven for an event & can pick four different topping options. Most interested parties queried so far think we should include margherita but I am unsure of their motives, thought maybe they were just thinking of hypothetical awkward people (e.g. children) who might be unable to cope with anything more adventurous. Not looking good for my hypothesis.

I wouldn't go for it as a first choice. It's ok, but tomatoes are a second-tier pizza topping for me. Not the holiness that is sausage and onions, but not as low as "you put BROCCOLI on it?"

I pretty much always order a margherita at a fancy/snobby/aspirational pizza place - the kind that brags about their 00 flour and san marzano tomatoes and buffalo mozzeralla - to establish a baseline level of quality. I'd never order one from a delivery place.

I think of "cheese" pizza as being more or less covered with cheese, barring the edge. Margherita has globs of fresh mozzarella that leave a lot of the fresh/chunk tomato sauce exposed.

Pepperoni -- meat requirement

Blue cheese, rocket and Balsamic Glaze -- balsamic's too sweet usually but people love this

I rarely go for a margherita myself because it's just not enough food for a growing boy like me, and it gets cold quickly (I am not a cold pizza guy), but it can be completely fantastic when I'm not that hungry and when basic is exactly what I'm after

as for using a margherita as a yardstick by which to judge a pizzeria's fundamentals, I guess so, but this seems more theoretical than practical, if I want to check out a new band I go with the album that has the song I like, not the album with the most stripped-down arrangement & production

I don't know if I've ever seen a legitimate margherita available by the slice. It's generally the very difference cheese pizza that's available by the slice. I suspect a margherita slice wouldn't take as well to reheating; margherita pies also don't hold together as well as a cheese pie which I imagine would make it more difficult to sell by the slice.

Similarly, I like a good al pastor or chicken taco with maybe cilantro and salsa, but none of the extra other toppings that can turn Mexican into synonymous with sour cream and goo.

There's not often tomato sauce, cheese, basil, garlic & crust that are so much better on their own that you'd choose it over another option on the menu that expands on those ingredients with added detail.
If you can get it by the slice, it's a different story.

I also don't order basic pasta + sauce dishes at restaurants either. Very rarely do they justify $14.99, yet somehow they get away with charging that price at millions of boring Italian restaurants. However, there's a few places in the city that are very much worth it.

if you want to make a cheap decent pizza at home i actually recommend using the lavash flatbreads from Trader Joe's as a crust, they crisp up in an oven really nicely at about 400 degrees. a little sauce, a little cheese, some basil, some cooked sausage. Bellissimo!

I think both maximalism + minimalism is good with pizzas. I have a kid with autism who will only scrape the toppings of a pizza so I make them packed with mozzarella/cheddar/spicy mexican style cheese/jalapenos/bell peppers/onions/cherry tomatoes/sweetcorn/minced beef/mushroom/garlic combos, mainly because it's the only bit he eats. But I like a nice simple posh margarita with basil leaves and a drizzle of olive oil etc but so fucking rarely get to eat that one.

over here in portland the trendy hipster pizza is new haven style with clams, which is something i never heard of growing up in new jersey. i had one. it was fucking great.

Never eaten one. I've only read a listing of the ingredients in such a pizza, so I have nothing else to go by.

If you require a lot of acidity on a pizza, this would no doubt seem like "a big round slab of blandness" no matter how well made it was. A margherita pizza would appear to require exceptionally high quality ingredients, handled deftly and knowingly, to be a true classic. I have no doubt somewhere or other it is done this way. Not sure I'd trust most pizzerias to deliver a really classic one.

My wife's favorite pizza ever is in central/south NJ called Federici's. They make extremely thin pizzas... the crust almost resembles a water cracker. One person can kill most of a whole large pie in one sitting.

I'm a big fan of pizza bianca, which is really just a delicious big flat bread with olive oil, salt and rosemary. Was turned on to it by Sullivan Street Bakery, whose Jim Lahey offered this legendary recipe:

Jim Lahey’s Pizza Bianca
Sullivan Street Bakery

Makes two long pizzas

3 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon sugar
1 teaspoon instant dry yeast
3 tablespoons extra-virgin olive oil
1 sprig fresh rosemary

1. Combine flour, 1/2 teaspoon salt, sugar, and yeast in the bowl of an electric mixer, and slowly add 1 cup cold water. Mix on low speed until ingredients begin to combine, increase speed to medium-high, and continue to mix for about 10 minutes until the dough is smooth, elastic, and cleanly pulls away from the sides of the mixing bowl.

2. Place dough in an oiled bowl, and allow to rest for 2 to 4 hours until it has doubled in size. Split the dough into halves, and form each into a log. Place each log on a generously floured surface, and allow it to rest until the formed dough doubles in size again, at least 1 hour.

3. Put dough on a lightly floured baker’s peel. Dimple dough by pressing it down with your fingertips. Work the dough outward toward the edges of the peel until you reach your desired size and thickness, about 1/4 inch. Drizzle with remaining olive oil, rosemary and sprinkle with remaining salt.

4. Place a baking stone, sometimes known as a pizza stone, in the oven. Set oven to broil, about 520 degrees. Slide pizza onto baking stone with the baker’s peel. Bake until the bubbles range from golden to deep brown in color, 10 to 12 minutes.

Yeah, I have never been to Detroit, but the best pizzas I've ever had have all been Detroit style... VIA 313 and Jet Pizza here in Austin, Barry's Pizza down in Houston, BJ's Brewhouse has an interesting variant of it (round pan, an even thicker but airier crust) but since franchising their pizza is getting less and less delicious. And of course, the Little Caesar's Pan! Pan! pizza (now called Deep! Deep! I believe) which will destroy your guts if you do not have an iron constitution but is total sensory overload when done right.

I moved back to Michigan this year and am eating cold leftover Detroit-style pizza as I read this thread. I really missed it and didn't appreciate as I should have when I used to live here.

The pacific northwest has fucking terrible pizza, like they heard a description of it from far away and tried to copy it and you might consider it to be good if you've never been anywhere else. In Michigan everyone does it slightly different and even the shittiest regional chains have better pizza than the default in Washington.

The pacific northwest has fucking terrible pizza, like they heard a description of it from far away and tried to copy it and you might consider it to be good if you've never been anywhere else.

The point is that extra toppings do not equal extra fun. A pure margherita is the basis of fun. It's more like, I don't know, I want to play a game of chess, whereas you want to play a game of chess where the board lights up and the pieces sing every time they're taken. Yeah, that's great sometimes, but it's not something you're going to want to play all of the time.

Isn't that a circular reference? 'Pie gets used because of pizzapaia which comes about from Sicilians trying to say pie after they saw it written down about pizza'.

How about this for a cobbled together etymology? Almost all Italian American immigration is from the 'Two Sicilies' - effectively Naples and Sicily. When the round, Neapolitan, shape started to take hold and define what pizza was, the rectangular, Sicilian shape tried to claim it was just as good - literally 'pizza paia', or pizza equal. This became 'pie' in English to differentiate between the shapes and over the intervening years got (mistakenly) applied to both kinds. Sounds as plausible as anything else.
