There have been threads on this topic, but the matter has not been put to a vote...until now! Inspired by a Twitter follow who came down hard on the cake side of things, as did many of her followers. Food poll fiends of ILE, I put the question to you: cake, or pie?

Cake, easily. Not much of a tradition for dessert pies where I'm from, but whenever I eat one, I regret my choice and gaze longingly towards the cakes. Lack of tradition yields lack of quality, perhaps.

That said, dinner pies >>>>>>>>>>> smörgåstårta. Are there other dinner cakes? Aspic, sorta, I guess?

my vote btw is for pie because I am a fucking glutton. there's no other way to describe me, I like to eat and eat. and I like foods I can eat a lot of. cake, no matter how good it is, I'm good after one piece. especially if it's a rich frosting. the frosting will knock me out. pie, line up half a dozen of them fuckers, I will eat them in sequence and put a bullet between your eyes if you try to sneak a piece from one of the not-in-use pies while I'm busy. cake is lovely, but at the end of the day, it cannot supply me with the quantity I need.

pie is a homeomorphism of pizza in the Four Foods Theory

ciderpress, Thursday, 15 December 2016 18:21 (seven years ago) link

The early Greeks considered it a cake. Some modern authors point to the presence of many eggs, the sole source of leavening, as proof that it is a torte. Still others claim that the separate crust, the soft filling, and the absence of flour prove that it is a custard pie.[12]

im assuming this is referring to dessert pies and dessert cakes so does not encompass fatayer/samosas/empanadas vs spanish tortillas. savoury pies vs savoury cakes is difficult. sweet pies vs sweet cakes is easy, clear pies is the answer

marcos, Thursday, 15 December 2016 18:44 (seven years ago) link

imo pizza is very tricky because its crust has yeast. proper cakes and pies really don't, I think -- pie crust, savory or sweet, is flour & shortening whether it's butter or lard or vegetable shortening. cakes that rise are muffins or biscuits. pizza really kinda is just the perfection of savory pie but in my view can only enter a pie vs. cake poll on somewhat false pretenses

I say pie. You can have pie for breakfast, make them sweet or savory, they can have fruit or cream and other stuff, and best of all is the pie shake, a milkshake made by blending in a slice of pie, which is the best thing ever.

I'm making two cakes next week, a red velvet and a boozy rum cake. The latter is super complicated, and a good cake is much more satisfying, to me as a baker, than a good pie. But I still vote pie. Plus, like, pie in the face! You can't do that with cake, except during weddings, and that's a dumb tradition, anyway, to shove cake in each other's face. I don't think anyone would deny a much better tradition would be for the best man getting you with a pie in the face. Some time, at the reception, when you least expect it. That would be hilarious. The groom would be having a great time, but always, in the back of his mind, he'll be wondering: when is he going to get me? Maybe it will even happen during dessert, when he's having cake. Who knows?

And pie with a scoop of ice-cream is just so good. The only people who have cake and ice cream together are children, but they'll eat anything. Ask Carvel.

Pizza is not a pie. It's stuff-on-bread. You'd never say cheese-on-toast was a fucking pie.

Quiche is not a pie either, ffs. It's stuff-on-pastry. A pie has a LID. That's how you know it's a pie. Cottage pie. Fish pie. Defined by their lids.

A sausage roll is not a pie, either, not everything with pastry is a fucking pie.

Cheesecake is a CAKE. That's why it's called cheeseCAKE.

more than any other food, even passable pies and cakes sometimes just feel like big hunks of stuff, and eating them becomes a very self-conscious process of piling this inert matter into your mouth. even the most disastrous cake is recognisably human in its origins, but the worst pies are inedible, anti-human husks, baked deposits that instill a dasein dread and are only fit to be buried deep in the earth. a truly awful pie makes the world colder and gloomier

on the other hand they can both be delicious

marcos, Wednesday, 21 December 2016 14:46 (seven years ago) link

the lid is a red herring, i would put quiches, flans, tarts in to the realm of pie, which is really "solid (baked?) crust plus filling" - i'd say pizza is an outlier but not argue too hard, a calzone is more or less a pasty - which also belongs to the realm of pie, alongside sausage rolls

Shepherds pie. Cottage pie. Fish pie. No crusts, no bases, no pastry at all. Several pies in the uk just have pastry lids and no bottom.

Shepherd's pie's so-called lid is a layer of mashed potatoes, i.e., an ingredient, it's not a pie lid that in any way resembles a pastry. If you let shepherd's pie in then the whole lot has to come in with it, including pizza. As a shepherd yourself you should know this

F♯ A♯ (∞), Wednesday, 21 December 2016 19:31 (seven years ago) link

I've never thought of cheesecake as a pie before, or even as a cake, really, but it's as much a pie as key lime pie, now that I think about it. It's a good question.

Josh in Chicago, Wednesday, 21 December 2016 19:36 (seven years ago) link

http://www.finecooking.com/item/11489/cheesecake-or-cheesepie

His conclusion: "So, in short, a cheesecake is a pie. It can also be a cake, but it can't not be a pie."

Josh in Chicago, Wednesday, 21 December 2016 19:39 (seven years ago) link

Another take:

Like the Tomato Fruit vs Vegetable debate, cheesecake can be classified as a pie (separate crust, the soft filling, and the absence of flour), a custard (unbaked cheesecakes), or a torte (using eggs as the sole source of leavening). But since the earliest cheesecakes were created by the early Greeks, and they considered it a cake, that is the general classification used.

Josh in Chicago, Wednesday, 21 December 2016 19:40 (seven years ago) link

Alton Brown:

Aside, of course, from the crust, a basic cheesecake only contains some sugar, vanilla, eggs and dairy. It's a custard no matter how you cut it. In fact the only real difference between a cheese cake and a cream pie is that most of the dairy of a cheesecake comes in the form of a soft, smooth, tangy, cow's milk cheese containing no less than 33 percent milk fat and no more than 55 percent moisture, known far and wide as cream cheese.

emil.y, Wednesday, 21 December 2016 20:13 (seven years ago) link

Having said that, I'm willing to believe that the true/technical definition does not require a lid. It's just... if someone were to offer pie, what would an average person expect? This may differ between countries but I'm not sure, there seems to be disagreement within countries too.

That Kendall Mint Cake stuff is designed to appeal to climbers who've entered the so-called Death Zone above 23,000 ft of elevation. They lose all their appetite up there and must force themselves to eat anything, just to prevent catastrophic weight loss and weakness. It is almost pure sugar, with a shot of mint extract to make it a bit more palatable.

xpost A crumble topping, not a crumble, which is more or less the same here as a crisp (which of course elsewhere means a potato chip). But then we're going down the rabbit hole of nomenclature and slang. Regardless, just because other countries have fewer pies than we do does not make our other pies any less pie!

Crumble has, well, crumble on top. But a pie is baked in a shell, top or no top.

Josh in Chicago, Wednesday, 21 December 2016 21:54 (seven years ago) link

http://www.thekitchn.com/pie-vs-tart-whats-the-differen-68710

A pie is a sweet or savory dish with a crust and a filling. The sides of a pie dish or pan are sloped. It can have a just a bottom, just a top, or both a bottom and a top crust. A pie crust is traditionally made of flour, salt, cold water, and lard (or shortening) but many pie crust recipes use a combination of fats such as butter, lard, or vegetable shortening, or just butter. The goal is a crisp, flaky crust. Pies are served straight from the dish in which they were baked.

A tart is a sweet or savory dish with shallow sides and only a bottom crust. Tart crusts are usually made from pastry dough: traditionally flour, unsalted butter, cold water, and sometimes sugar. The goal is a firm, crumbly crust. Tarts are baked in a pan with a removable bottom, or in pastry ring on top of a baking sheet so that it can be unmolded before serving.

They call them "cousins," along with galettes.

The Dutch Apple Pie does look like a pie! It has the bottom bit and the crumble makes a kind of lid, so it's more pie-like to me than tart type things.

The 'kitchn' link pretty much firms up the true definition, but I still maintain the average (British) person would expect both top and bottom crusts on something claiming to be a pie. Meaning is use and all that.
