Lex, have you ever had a patient, cooking-skilled friend go through a few basic things with you, in your own kitchen?
Btw I never cooked rice till WmC shared that rice recipe a couple years ago on the cooking thread - it makes perfect rice and you can skip the saute bit at the start.

no. i miiight be amenable to that but i don't really want to ask because a) i don't think it would end well b) i don't know what to ask or where to start.

man I should have really invited you over when you were last here

Sometimes my commute ends too quickly. Yesterday I was engrossed in a book so I stayed on to the end of the line and then rode back.

I miss doing this. I've taken to podcasting on buses in the past year which is just NOT the same thing and it's a bad habit. Music has taken over headphones at the gym where podcasts once ruled and thus books on the bus have been shoved to the side. Might be the solution to the lack of fiction I've read lately.

Xps just ask, and just be completely honest about your lack of skills. Cooking rice and pasta, sauteing veggies, marinating meats, boiling/steaming veggies, baking and pan-frying meat, roasting - these are all simple techniques that are (usually) easy to learn, and will provide you with many different kinds of meals. Get your friend to do each technique and explain why they are doing each piece of that technique. Then have them walk you through doing it yourself another time.
Just an idea! Also: alcohol should be involved in these lessons, if you think it'll help you not feel so pressured.

the glass of wine you drink while cooking is my favorite glass of wine

Also, Lex, even though I learned to cook at a very young age, I hated it for years bc I had to cook most of the family meals from 12-18. I've only started to really get more into it bc I am fortunate enough to have a v appreciative audience - it has def inspired me to cook much more adventurously than I ever imagined possible.

What do you do? I just saute garlic and onion and pepper and then add the water and soaked black beans and a bay leaf and simmer for a bit
― Joan Cusack clumsily running into a water fountain (Stevie D(eux)), Wednesday, 14 March 2012 14:47 (twelve years ago) link
i brown diced onions & jalapenos & minced garlic in a skillet, add tomato paste, adobo, cumin, cayenne, black pepper, let it get all nice and carmelized and sticky, and deglaze with red wine vinegar. add to simmering beans.

always. be. deglazing.

it just takes a bit of planning bcz you have to prepare the night before. Just sort, soak, and simmer!

I still haven't mastered the art of pressure cooking. When Mom makes vats of black beans for Christmas Eve and see the little plastic tab at the top of the Hitachi going shhhhhh I get scared.

you can cook dried benas without a pre-soak, it takes longer tho. also soaking beans allows them to start germinating so they release some of the enzymes that cause gas, so soaked beens are less fart-making. #protip #farts
― i think this is serious (elmo argonaut), Wednesday, 14 March 2012 15:48 (twelve years ago) link
hmmmmm
farting is one of the best parts about eating beans
