Also the poll should have been between Manchego and an Italian sheep's milk cheese like pecorino

hey if you like ossau-iraty MW you should look for abbaye d'bellocq, it's from the same region but made by monks so its a little more refined flavor

kinda goes

abbaye > ossau-iraty > petit basque

the other one i am always trying to push on people who like manchego is zamorano which is pretty much manchego but not from la mancha, its got a subtly different flavor that i prefer

abbaye > ossau-iraty > petit basque

oh hell yeah. not necessarily in that order, but all these cheeses. think that this style of french/basque/spanish sheep's milk cheese is my favorite, at least for the raw nude eating of.

never had zamorano that i know of. will try.

oh! which is istara?

Mayan Calendar Deren (doo dah), Saturday, 18 February 2012 02:10 (twelve years ago) link

istara is a "brand" (consortium?) that distributes all three in different markets.

petit basque is a small fist-sized orange barrel with a basket weave pattern

ossau iraty is a large wheel with a light gray natural rind

abbaye is similar except beige and with a white mold dusting
