Just looking at some of these I'm having serious misgivings about the ham+chili sauce brigade. And there's also a such thing as too many flavours.

The above sandwich was one I used to get from this cafe called Battista's on Charing Cross Road; instead of 'panini' call it by its proper name - ROADKILL. Cafe is gone now, however.

I changed it up from a sandwich they make at Bayonne in New Orleans -- they use smoked duck and pickled red onions, I substituted bacon.

It's good! The hot bacon makes a little of the spicy jelly caramelize or something. It's like peanut butter and jelly, but uh oh, surprise spicy bacon!
