chicken fajitas! i feel like an applebee's. these were really good tho, sweet & smoky: chicken was marinated in orange juice/achiote seeds/angostura bitters/cumin/cinnamon/salt/black pepper and i used red onion/orange bell pepper/pasilla chile for the aromatics.

been experimenting with making ethiopian food! mesir wot and some other stuff. it all turned out great
i made my own berbere powder, using a recipe i found on an ethiopian website plus a bit of guesswork. it involved grinding together something like 12 different spices. smells amazing. not too hard to do if you're used to making indian food all the time

2 tsp cumin 1 tsp ginger 1 tsp cayenne 1 tsp sea salt1 tsp sweet paprika1 tsp fenugreek 1/2 tsp allspice1/2 tsp coriander 1/2 tsp cinnamon 1/2 tsp black pepper1/2 tsp cloves1/2 tsp cardamom1/4 tsp turmeric
