ya where the wonder and pickle chips @ ? !!!!

jhøshea, Tuesday, 29 May 2007 13:59 (nineteen years ago)

GINB!!

Chopped, not too fine, don't bogart the black edges for yourself, sauce somewhere in between tomato-based and vinegar-based, not too much, it's more for the fries than the sandwich, which should have slaw on it, kthx.

Rock Hardy, Tuesday, 29 May 2007 14:01 (nineteen years ago)

this new place is near me and is my enemies even though i eat there sometimes. authentic brooklyn bbq wtf guys.

jhøshea, Tuesday, 29 May 2007 14:03 (nineteen years ago)

Rock Hardy, Tuesday, 29 May 2007 14:05 (nineteen years ago)

xp smoke joint

jhøshea, Tuesday, 29 May 2007 15:45 (nineteen years ago)

D'oh that damn Z!

I'm voting for Alabama because Dreamland ribs blew my fuckin' mind and I've eaten there more recently than KC, Memphis or the CAROLINAZ (never been to Texas much.) St. Louis is not a great BBQ town IMO.

Alex in SF, Tuesday, 29 May 2007 15:49 (nineteen years ago)

btw texas is the best u guys

jhøshea, Tuesday, 29 May 2007 15:49 (nineteen years ago)

Yeah but it's Texas.

Alex in SF, Tuesday, 29 May 2007 15:53 (nineteen years ago)

i thought this would be about mark sultan.

anyway, i'll take payne's bbq, plz.

chicago kevin, Tuesday, 29 May 2007 15:54 (nineteen years ago)

I would eat the hell out of some brisket.

Rock Hardy, Tuesday, 29 May 2007 15:55 (nineteen years ago)

texas is actually a pretty great place when you go there

jhøshea, Tuesday, 29 May 2007 15:55 (nineteen years ago)

> Yeah but it's Texas.

And what exactly is your objection to buckets of microbrewed german and czech style beer with your meal?

Oilyrags, Tuesday, 29 May 2007 15:55 (nineteen years ago)

no monogolian, no credibility

max, Tuesday, 29 May 2007 15:55 (nineteen years ago)

I've had BBQ'ed ribs twice in the past four days. This is surely a good thing.

Ms Misery, Tuesday, 29 May 2007 15:57 (nineteen years ago)

if i lived in texas i would be so fat

jhøshea, Tuesday, 29 May 2007 15:57 (nineteen years ago)

just sit around in the a/c eating brisket

jhøshea, Tuesday, 29 May 2007 15:58 (nineteen years ago)

texas is actually a pretty great place when you go there

i would rather have a bullet in my head than go to houston again.

chicago kevin, Tuesday, 29 May 2007 15:59 (nineteen years ago)

Or Dallas.

Alex in SF, Tuesday, 29 May 2007 15:59 (nineteen years ago)

xpost - i was just thinking that!

oh, houston is SO much worse!

lauren, Tuesday, 29 May 2007 16:00 (nineteen years ago)

And I'm not planning on going near El Paso or San Antonio if I can avoid it.

I've never been to Austin though. At some point, I suppose I should.

Alex in SF, Tuesday, 29 May 2007 16:00 (nineteen years ago)

yeah i was gonna say except houston and dallas but you know

jhøshea, Tuesday, 29 May 2007 16:02 (nineteen years ago)

i liked galveston, i liked the hill country, i liked west texas, i loooved the bbq.

jhøshea, Tuesday, 29 May 2007 16:03 (nineteen years ago)

i would also not like to ever go to waco, el paso, or amarillo. i loved austin and am the only person i know who liked dallas.

chicago kevin, Tuesday, 29 May 2007 16:03 (nineteen years ago)

never again got to waco, etc...

chicago kevin, Tuesday, 29 May 2007 16:03 (nineteen years ago)

austin was alright

jhøshea, Tuesday, 29 May 2007 16:03 (nineteen years ago)

I don't think I'll ever go to Texas unless I'm flying. Takes three days of driving just to get into and out of there!

Rock Hardy, Tuesday, 29 May 2007 16:04 (nineteen years ago)

1) Memphis (actually Northern Mississippi you fuckers)
2) Genghis Khan/Mongolian
3) North Carolina
4) Korean/Yakiniku
5) Tri-Tip (Central Californian)
6) Luau
7) Satay

Steve Shasta, Tuesday, 29 May 2007 16:04 (nineteen years ago)

Payne's BBQ in Memphis was the best I've ever had. Also, the inside of the restaurant looks like a Jim Jarmusch film.

molly mummenschanz, Tuesday, 29 May 2007 16:06 (nineteen years ago)

i have read the mongolian bbq wiki and i am declaring it to be not bbq

Nomadic Mongolians have several barbecue methods, one of them called 'Khorkhog'. They first heat palm-sized stones to a high temperature over the fire and sandwich several layers of lamb and stone in a pot. The cooking time depends on the amount of lamb used. It is believed that it's good for your health if you hold the stone used for cooking.

Another way of cooking is a "boodog" ("boo" means wrap in Mongolian). Usually marmot (black tail prairie dog) or goats are cooked in this way. There is no pot needed for cooking "boodog", after slaughter and dressing, the innards are put back inside through a small hole and the whole carcass is cooked over the fire.

The Mongolian barbecue often found in restaurants is a style of cooking falsely attributed to the mobile lifestyle of nomadic Mongolians. Having its origins in Taiwan in the mid to late 20th century, "Mongolian" barbecue consists of thinly sliced lamb, beef, chicken, pork, or other meat, seasonings, vegetables, and noodles, or a combination thereof, that are quickly cooked over a flat circular metal surface that has been heated.

jhøshea, Tuesday, 29 May 2007 16:06 (nineteen years ago)

Payne's BBQ is awesome. So is Arthur Bryants. These places' reps are well deserved IMO.

Alex in SF, Tuesday, 29 May 2007 16:08 (nineteen years ago)

Payne's BBQ in Memphis was the best I've ever had.

most otm thing i've ever read on ilx. i can't wait to go back in september.

chicago kevin, Tuesday, 29 May 2007 16:09 (nineteen years ago)

That said I'm still not sure that any of them beat Dreamland's ribs. I don't really advocate going to Birmingham or Tuscaloooooosa for any reason really, BUT if you are there then you have to go there.

Alex in SF, Tuesday, 29 May 2007 16:10 (nineteen years ago)

oh shit, i think i've been there^^.

Mr. Que, Tuesday, 29 May 2007 16:11 (nineteen years ago)

mmm, Payne's.

i like it north carolina style. on a bun w.slaw

had some pretty good ribs in nyc over memorial day, there's more bbq places here now than ever before. new york's never been a bbq town.

what about brazilian-style bbq where they bring around all the meat on swords? that's big out here but I've never tried it.

m coleman, Tuesday, 29 May 2007 16:18 (nineteen years ago)

I've had it. It's def. good.

Alex in SF, Tuesday, 29 May 2007 16:19 (nineteen years ago)

PIG PICKIN.

Also western NC style all the way baby, although eastern is good too. I can only assume Texas beat Carolina because of all the ignorant yankees up in here. ;)

jessie monster, Monday, 4 June 2007 14:44 (nineteen years ago)

Euler, where do you like in KC? How does Gates stack up?

Jordan, Monday, 4 June 2007 14:56 (nineteen years ago)

I feel such sorrow for vegetarians when I think how daily they willingly miss out on the joys of pigs. Pulled pork, bacon, pepperoni--those are the Trinity from whom I can never turn away.

brownie, Monday, 4 June 2007 15:06 (nineteen years ago)

Gates is fantastic. If I were bringing a new visitor to KC to just one place, it would be Arthur Bryant's, though, for the atmosphere, and the legend, I guess. After that I'd go to LCs if I were near the city center (pork or burnt ends are great, and the best fries on Earth), or Oklahoma Joe's in KC KS (esp. for the Z-Man, a brisket sandwich with smoked mozzerella and onion rings). I have a soft spot (ok, after living near KC a while several soft spots) for Jones' in KC KS, and tend to go there now when I'm in town, but I wouldn't go there as a first-time visitor to the city, prob., just b/c there's so many other places to go first.

Ruby's BBQ is legend. I used to go there twice a week, when I lived nearby.

kenan, Monday, 4 June 2007 15:18 (nineteen years ago)

(originally posted on the Chicago thread, where the conversation has turned to all things porky)

OK, I'm confused. I think I have to take this to the BBQ thread.....

From Stamey's website: "The entrepreneur of Lexington-style, Stamey is now synonymous with great barbecue."

But Stamey's sauce is vinegary and spicy with zero tomato or sweetness.

Jesse, Monday, 4 June 2007 15:27 (nineteen years ago)

Also:

"Today, Stamey’s has been serving its staple “Lexington-style” barbecue pork and its “secret sauce” to Triad diners for 66 years. "

But it is definitely 100% true to the Eastern NC style!! Now you understand my cornfusion??

Jesse, Monday, 4 June 2007 15:29 (nineteen years ago)

I can't believe that the best BBQ in the world got the same number of votes as Korea!

does not compute, redundancy

Food Wars: Barbecue is on the Travel Channel right now.

Kerm, Monday, 4 June 2007 22:41 (nineteen years ago)

wellz I am biased but Texas b/c we stick to the runny/vinagery ethic (as opposed to thick & sweet). it's really more about the sauce than the meat *ducks salvo of revolver fire*

wanko ergo sum, Monday, 4 June 2007 22:46 (nineteen years ago)

Uh, NC just lost the show's tasting competition... but all the judges were fatass cowboy wannabes in hats and boots and there were yellow, treeless mountains in the background so I'm calling shenanigans.

There is a great place in Knoxville called Leo's Pulled Pig that I would argue has the best bbq in the south.

ni jo leeeeeee, Monday, 16 July 2007 17:31 (eighteen years ago)

and i say that even though they have a pro-life sign attached to the wall. somehow i can ignore that to taste this fucking super bbq.

Big fan of BAR B-Q in vaguely Park Slope/Sunset Park. 21st St & 6th Ave. Cheap. Monday nights FREE BOURBON OF THE WEEK 7-9. Some of the best wings evar. Huge & meaty, smoked and then smothered in Frank's-based sauce. Deeeeeefuckinglicious. Cheap also!

I missed Bernard's revive up there. I'm back in NC for the Winter/Spring. I had BBQ in Durham just last Friday and our waitress looked like a teenage Giada de Laurentiis in Tina Fey glasses.

bbq places in l.a. are hit-or-miss bigtime; most of them are just "passable." the best ribs i've had were still at this non-bbq joint called Animal, where the meat literally just slipped off the bone at the merest touch.

i like zeke's in west hollywood even though it's completely bourgie. wasn't wowed by baby blues bbq the one time i went, but they did have this very good housemade pepper-infused vinegar that mixed well with the bottle of hot sauce that was sitting next to it. i would go back just to guzzle that.
