I have tried gazpacho, I have never *made* gazpacho. Similar to how many a Southern Californian buys a taco without ever having made one.

Ned what about POST EQUINE TRANSPORTATION?? you must be the only adult in southern cali who doesn't drive.

anyway I finally tried WHITE gazpacho at a fancy NYC restaurant last year, it was totally amazing. made from almonds, no dairy, just indescribly delicious. I like the red stuff too, been getting it from Zabar's of all places -- kosher gazpacho?
my friend who's from Spain gave a big lecture once about gazpacho and of course nobody in america knows how to make it and mexican gaz -- forget about it. I guess white gazpacho is a regional variation.

During its long, arid summers, Andalucía cools itself down with chilled gazpacho, a hearty and pungent soup that has gained fame throughout the world for its amazing thirst-quenching quality. Often described as a liquid salad, gazpacho descends from ancient Roman concoction based on a combination of stale bread, garlic, olive oil, salt, and vinegar. As Romans labored to build roads and aqueducts across Spain in the scorching heat, this creamy soup replenished them with the necessary salt and vitamins lost through physical exertion. Later, shepherds and farmers added vegetables to make it more hearty and satisfying.


Because tomatoes and bell peppers were not indigenous to Spain, these ingredients were not added to the soup until after Spain's discovery of the New World. Since that time, gazpacho has remained relatively unchanged - an unpretentious soup designed to quench the thirst evoked by the unrelenting Spanish sun.

Whenever I've had it in spain (mainly in catalunya) it has been server with chopped vegetables and crutons in little side dishes to sprinkle on as required.

white gazpacho OTM

This is how I do it every summer. I don't have the recipe anymore but this is more or less right...

2 tomatoes, seeded and chopped
1 yellow or orange pepper, seeded and chopped
1 cucumber, chopped
1 onion, chopped
1-2 cloves garlic, minced
2 c. chicken (or veggie) stock
1 c. V8 juice
1 Tbs. red wine vinegar
12 ice cubes
Salt and pepper to taste

Combine. Refrigerate. (If you eat it immediately, it won't taste right at all.) Once the ice cubes have melted, taste. If it's too strong, add some cold water. Serve.

*The raw onions and garlic will give you terrible breath, so make sure everyone around you eats some too.

I had a friend from San Diego who made what she called gazpacho, but which was (to me) pico de gallo. Is this kind of thing commonly called gazpacho in SoCal?

i was making golden gazpacho at a place i was working at last year. it was really killer: the usu. gazpacho ingredients, but with golden tomatoes, a bit of orange juice (not enough to taste it), and i forget if there was another acid in there....people LOVED it.
