See, this is the thing: there's only one kind of maple syrup, and since butter doesn't grow on trees YOU'LL HAVE TO APPLY IT SEPARATELY.

Does anyone else take their own syrup to restaurants? I grew up in a family of maple syrup snobs. I hate to put that fake shit on pancakes or french toast. (I have gotten my wife on board with this. She grew up in the South and didn't know any better, but once I got her on the real maple there was no going back.)

Yeah, this was something my parents always did. If someone forgot to bring it and we had to use the crappy sugar syrup, there was great lamenting and rending of garments.

I was always fond of Mrs Butterworth's -- thought it was way better than Log Cabin, anyway.
And I don't like that stuff at the IHOP... although the blueberry was interesting.

I'm not in the U.S. anymore and I went to buy some maple here and it was fucking horrible.

Mrs. Butterworths isn't as buttery tasting as it used to be. I don't think it even has any tree-blood in it anymore, just HFCS and artificial flavor. I like real maple syrup okay, but it's too thin.

Also, there has been not enough discussion on this thread of the glories of MAPLE SUGAR CANDY -- which, again, you have to get the REAL stuff and not the "maple-flavored" crap. That was always in our stockings on Christmas. I suddenly feel like my holiday experience is incomplete.

i mean, specifically, what kind is best? my dad has been telling me that the 'grade a dark amber' stuff most commonly sold in stores nationally is on the low not as good as the "crappier" grades & its basically a trick for the locals to keep all the good syrup to themselves

I think 'what kind is best' largely depends on personal taste. A lot of ppl do opt for the darker grades as you dad suggests though, despite the predominance of lighter grades in stores and breakfast cafes. There is no difference in how various grades of maple syrup are collected - the colour variations are a result of seasonal/temperature changes rather than some being more 'processed' than others.

Personally I'd probably go with a darker one... not the very darkest, the one above that. Somewhere in the range of 'dark with robust taste' or 'dark amber'. And then I'd use it to make maple pecan tarts and for frying sausages at breakfast, mmm.

Maybe buy a light and a dark and do a taste test?

because actual maple butter (aka maple cream) is a spreadable paste made from 100% maple syrup, and it's great. you can buy it at farmstands or make it yourself by boiling and cooling maple syrup and stirring it until it thickens (I've never made it myself, but I've been meaning to for some time)

tbh I can't really tell the difference between light and dark syrups
