I can't pass up this thread without a mention of MENUDO! No, not the boyband that kick-started the career of Mr. Ricky "Shake your bon-bon" Martin, but the really flavorful soupy meal of that name. Really lovely stuff.

My parents used to eat all manner of things, including tongue, liver, tripas (intestines), and brains. My mom still loves liver and tripas, and I've actually gone through and tried tripas before (and disliked its flavor, but ah well).

Still... brains... ugh. Double ugh. "I'm getting sick here" ugh.

dee, tripas , is tripe not intestines, intestines is what you fill to make sausages, at least if you are doing it properly. Tripe is the feathery membrane that hold the organs in.

i've had marrow, spleens, livers, hearts, kidneys, tongues, and gizzards and I can't say that any of them are tasty. the livers taste the worst, and the hearts and gizzards are really chewy and just dont sit right with me. my parents love the stuff, including that red flappy stuff on top of a chicken's head.

i grew up being fed things like fried liver, tripe, headcheese, and giblet soup by my lunatic czech grandmother. if i tired of those delicacies, my lunatic russian grandmother was at the ready with gizzards, kishka, and tongue. at the time i didn't think there was anything particularly gross about any of it (except for headcheese, GOOD GOD WHY), but as i learned more what things actually were i went off a lot of it. these days, the only offal i eat is monkfish liver at japanese restaurants.

I'm a bit of a lightweight, and don't go much further than liver, kidney, tripe, haggis, black pudding, chitterling, tongue and heart on a fairly regular basis. I get giblets with my goose at Christmas, but don't generally do anything more adventurous than make gravy with them.

That said, I'd love to try more things - particularly since I inherited a wartime recipe book that has an unbelievable amount of offal recipes (including an astonishing looking lamb's brain sauce). I just need to find a better butcher, I guess.

my grandad used to love it. i used to think it was disgusting, but having eaten some a while ago from a small country butcher i know, i have to say it's pretty amazing. i think it's one of those things where you either need not to care about what you're eating or just not know. the secret ingredient in the great one i had was apparently mace.

how is it more disgusting to eat an organ than muscle tissue?
in each case you are devouring the flesh of a once-living thing. is it b/c we have all grown accustomed to the texture of chicken, but most of us are not familiar with liver etc? this concept is confusing to me

Well, pardon my potential ignorance, but isn't the make-up of certain organs (thalmus, kidney, liver, etc.) much different than that of muscle tissue? And, therefore, isn't the manner and amount of retention of "stuff" in those tissues different? Like, aren't the kidneys and liver the filtration devices for the body?

Not that this matters - I could crush some foie gras with a vengeance today. I'm just saying that I understand some people's hesitation in consuming glandular materials.

I also love it, because it means more for me. Woot!

I don't think it's any more disgusting. But it is a matter of privilege, being able to throw away part of the animal, so I suppose some class disgust can creep in.
