i heartily approve, although i only really enjoy prosciutto, bresaola, and pancetta when they're cooked at high temperatures (fried, baked onto pizza, sauteed in oil with some vegetables).

Meat isn't something you can cure! It's something you're born w... oh, sorry, wrong thread.

I've never heard of bresaola but after reading descriptions of it...GIMME!

(where "zh" is like the "g" in "gigi" and "uhl" rhymes with "skull")

Totally approve. That brisket's life was a misery and an embarrassment until it was cured. Now it's IN MY BELLY.

Jetlag Willy (noodle vague), Saturday, 28 May 2005 20:10 (eighteen years ago) link

Ed (dali), Saturday, 28 May 2005 20:14 (eighteen years ago) link

If meat wasn't so sick you wouldn't have to cure it! Dahut, dahahahahahut!

We've smuggled White Pudding back from Ireland before, but frankly it's worryingly Spinal Tap.

Sausage of the Month Club?

But we have bacon of the month club already!

Jeez. Now I'm intrigued.

what i'd love right now is a semolina hero roll with some hot cappicola and thinly sliced provolone. maybe some kind of herby oil on the bread too.

today my wish came true.

lunch, from beyond bread (i got the half-sandwich, which was pretty generously sized):

Enzo's Ending-NEW! $6.50
Pepperoni, ham, provolone, pepperoncini, lettuce, tomato,
red onion, Italian dressing on a Torpedo Roll. Half $4.25

and now for dinner i'm enoying some soppressata and asiago cheese that i got at trader joe's. it seems to have made it home ok in the heat, but if i get food poisoning i'll know why.

for those of you who haven't lived in heavily italian areas:

What is Sopressata?

A salami made from cured-dry pork and flavored with and black peppercorns. This meat cures between 6-8 weeks [air-dried]. It comes in hot and sweet flavors. It is also made with either ground black pepper or red pepper. {since they use a larger casing for sopressata, it takes a longer time to cure than the traditional Italian sausage.}
